Scrambled Eggs with Turnip Greens & Parmesan Cheese

Psst...this is a great way to get your kids some extra nutrients and help you use those tops you didn’t know what to do with.

Ingredients

  • 2 whole eggs

  • 1 bu baby turnip top greens, washed and roughly chopped (yes the stems too)

  • Salt and pepper

  • Parmesan cheese (I recommend having a microplane)

Directions

  1. Preheat your favorite egg pan over medium heat (I like stainless steel, carbon steel, or cast iron). Whisk the eggs. Season with salt and pepper.
  2. Add a little whole butter or extra virgin olive oil to the pan. Pro tip: use bacon fat or chicken fat. I always save the bacon fat or chicken fat for added flavor. Gently pour in the eggs and the greens. Ensure to constantly stir the pan with a wooden spoon or spatula. Move the pan away from the heat The residual heat stored in the pan will continue the cooking process and give you fluffy and custardy like eggs.
  3. Place onto your favorite plate or bowl and gently shower with parmesan cheese.
